Ingredients
Corn on the cob
Aubergine
Courgetti
Red pepper
Baby gem lettuce
Parboil the sweetcorn and grill all veggies in a grill pan, using a small amount of olive oil with smoked paprika brushed over the veg.
Dressing
½ cup or 180 g natural yoghurt
1 tsp dried oregano
1 tbsp bio mayonnaise
1tsp smoked paprika
1 tsp sambal
Juice of 1 lime
Salt and pepper to taste
1 tbsp EVOO
Mix all the dressing ingredients together.
*You can use plant-based substitutes for yoghurt and mayo.
